Turmeric Rice Recipe

Turmeric Rice with Chickpeas Recipe

 

Hello my friends, some interest was shown in the recipe for turmeric rice I cooked a few days ago. I added turmeric and cumin seeds as I love the flavor of cumin seeds.

So here goes,

Ingredients:

1 cup rice (I like Jasmine)

1 1/2 cups water or stock of your choice

1 teaspoon cumin seeds

1 teaspoon turmeric

1/2 can drained chickpeas

1/2 cup mixed vegetables, if you like

2 large cloves of garlic chopped

1 onion chopped

1 stalk celery chopped

salt, and pepper to taste

Directions:

  • Add oil to skillet and heat.
  • Place onions and garlic to cook, once softened add cumin seeds to bloom (1 minute).
  • Add 1 teaspoon turmeric to cook, stirring constantly (do not allow to burn).
  • Add celery, salt, pepper, etc and any meat of your choice to sear at this time.
  • Finally add rice, stirring to allow to coat with seasonings and to fry for another minute.
  • Next add any other desired seasonings and your water or stock to pot.
  • Check flavor and allow rice to cook 2/3 way through.
  • Add chickpeas.
  • Lower flame and cover to allow rice to be complete cooking.
  • Serve according to your liking.

Once rice has completely cooked and is still warm I added the bits of bacon and my spring onions.

The cumin seeds provide another dimension of flavor, when you bite the seeds they add  beautiful texture as well as taste.

    I added turmeric and cumin seeds to fresh asparagus chopped small, sliced water chestnuts, salsa, and sausage a few days ago. I put in a couple of ounces of water and put the lid on just long enough to steam the asparagus. Then I added a bunch of eggs and stirred up an amazing omelette! I folded in 3 slices of Gouda cheese at the last minute. I could see in my husband’s eyes that he really liked it! And I did too!

    1. Great. I have never tried Gouda cheese. I will try it soon. The cumin seeds I think enhances the flavors as when cooking curry cumin seeds and garam masala are a must.

      1. Which kind of curry do you use the garam masala in? I bought some once, I think for Indian lamb Curry, and it’s just sitting in my cabinet not being used.
        My son has been convincing me to get a lot of cans of water chestnuts. And I have the asparagus in the garden. But the family gets tired of eating it plain. So I decided to try it in other ways. When I cut it up small and had the spices with it, you couldn’t even tell that the asparagus was there, that is, there was no distinguishable asparagus flavor.
        I first ate Gouda cheese when I lived overseas. I don’t usually buy it because I normally try to eat dairy free, but I bought it on a whim the last time I went shopping. It was really good in the omelette.

          This one great for chicken and seafood.
          I grew up using it in Guyana, we have a large Indian population, I have tried other brands, but do not like the taste. There is another brand that is better for “heavier meats” like beef, lamb etc.

            I tried a variation of your recipe tonight using hamburger and water instead of chick peas and stock. I also added some ginger and 2 cardamom pods. I used chopped asparagus instead of mixed vegetables. It was very good.
            I still want to try it with the chick peas and stock like you did.

            1. You can try amazon and look for the “indi curry powder” and try a smaller pack.
