I hail from a country with several ethnic groups of people and a metropolitan of culinary delights!
So yesterday was my day off and my turn cook curry. My family loves curry as well.
Since we are all “languishing” at home, food can be a good servant or a bad master.
I thought I would put my recipe down if anyone is interested, so here goes.
Ingredients:
- 3 lbs chicken chicken, clean and seasoned to your taste.
- Add 6 heaping tablespoons of curry to the chicken and allow to marinate for about 4 hours, overnight if you have the time
- Chop/grate 4-6 medium cloves of garlic
- Chop/grate 1 medium onion.
- 1 Tbsp of whole cumin seeds
- I Tbsp Garam Masala powder
- 2 medium Irish potatoes
- Salt to taste


I added 4 heaping Tbsps Indi Madras curry powder to marinate


Add another 2 heaping tablespoons of curry powder to the pan stirring continuously allowing it to “fry/cook” for 1 minute.

I add my seasoned chicken and let sear a little before adding water.
Cover your pot so that the natural juices that escape from the meat all meld together creating a delicious sauce.
Cook on low heat for approx. 45 mins to 1 hour until chicken is thoroughly cooked or done enough for you.
I also add Irish potatoes to the food when it’s two/thirds cooked.

Check for seasoning according to your taste. Now you can make taste to your liking.
There are several other ways to enjoy curry but we will explore those at a later date.
If you have never tried a curry dish, you are missing out on a great culinary experience.

I like it for a few reasons – straight forward, looks yummy, not a crazy amount of ingredients! Irish potatoes, not sure what that is? – are they green? Lucky? harvested on St Patrick’s day? sold by leprechauns? Sorry my friend – couldn’t resist (happy face)
Lol, just good old fashioned potatoes. I like the humor, something to lighten the mood. God knows.
